PUMP UP YOUR MOOD WITH THIS HEALING FOOD
Fall is harvest season. So why not cook up a nice pot of Borscht with local and seasonal ingredients and improve mood while detoxing your liver.
As a West Coast Gal living on Vancouver Island, I have abundant access to local food sources. My husband and I travel to our favourite farmer's market in Cedar, British Columbia every Sunday from May-October. Finding local and seasonal main ingredients helps me plan my meals based on what is current at the market. I made vegetable broth from vegetable scraps I saved from the previous week. Making and freezing some vegetable broth from all of your vegetable waste is a good use of vegetables prior to composting. This week I am using my vegetable broth and cooking up Borscht is my Instant Pot.
Instant Pot Borscht is a fast and affordable way to create a healthy, hearty and delicious meal that will feed the whole family. Borscht is also considered a comfort food that is suitable for most diets. It is easy to prepare and purchasing the ingredients from your local farmer's market will cost you less than a $1.00 a bowl. That is good money spent. You get access to local ingredients which gives your body the freshest nutrient profile possible. What better way to optimize mood with colourful and yummy beets, onions, and garlic!
Avocado and ginger are great additions to this version of borscht. Plus, they have the added benefits of being super rich in antioxidants like glutathione, which detoxifies and cleanses the liver and stimulates its cell function.
Eating this soup will boost energy and mood, detox your liver, tame inflammation, and feed your immune system. How amazing is that!
